Cottage Cheese Chicken Enchiladas

Delicious! Made exactly as recipe states except I used flour tortillas as I couldn't get corn tortillas here. Made a large amount, but they were so good that I didn't mind eating them for 2 dinners and a lunch! Nice creamy texture with just the right amount of zing!

Italian Pork Tenderloin

We really enjoyed this. I had enough for 2 nights so one night served it with pasta and the next with rice. Great flavor with a creamy, rich sauce, lots of interesting ingredients. Will look forward to serving this to company. Excellent dish!
