About me:
I am married, the mother of two beautiful girls ages 12 and 8, and I have been a high school English teacher for 17 years. When I am not racing home from work to the softball fields, swim lessons, piano lessons, etc., I am busy cooking healthy, traditional Italian American foods for my family. In our family, we stress the importance of healthy living which includes a healthy mind, body and spirit. That is why no matter how busy our schedules get, we make it a priority to sit and eat dinner together. Whenever possible, the girls help in the preparation and cooking of the food, especially at holiday time where meals take on a life of their own. (My kids wouldn't have it any other way.)

Fried Green Tomatoes

Here's a secret that I learned from a special friend in Georgia when she made "FGT"...she used a mixture of yellow corn meal and flour and she seasoned the egg batter with soul seasoning, then cooked in bacon grease...(she's an old timer)Just thinking about this makes my mouth water! Yummy & delicous!!!

Greek Orzo Salad

This was so tasty. I did chop the artichokes (didn't know if you are supposed to) and used 1/2 the artichoke marinade. I served it with gyros and it was awesome!

Mom's Zucchini Bread

This was awesome. The only thing different I did was use all whole wheat flour and I baked it in 1 loaf pan for an hour and 25 mins at 350. YUM YUM YUM! My 1 year old LOVES it too!!
