Chewy Peanut Butter Brownies

These are yummy. I doubled the recipe and added a half cup of peanutbutter chips and a half cup of semi-sweet chocolate chips. I baked them at 325 degrees for 30 minutes as others suggested. As soon as they came out of the oven, while still hot, I covered the brownies with another cup or so of semi-sweet chips. When the chips melted I spread them around the top of the brownies instead of frosting them. Great basic recipe.

Miracle Baking Powder Pie Crust

I was sceptical about using this recipe but I live in AZ and I think the dry air here has something to do with the way pie crusts handle. So, I decided to try this recipe and it worked very nicely. I let it chill overnight which was a mistake because it was rock hard when I went to roll it out. Also I used butter instead of shortening. But I had barely any trouble rolling it out compared to other recipes I've tried. I'll be using this recipe again instead of buying those pre-made crusts that are always too small to fit a 9 inch plate and don't taste as good as homemade either. Great recipe, thanks.

Easy Taco Casserole

This one was a winner with my family. I had to make one change. I have one son who won't eat anything with chunky tomatoes, peppers or onions in it, so I substituted a cup of mild taco sauce for the salsa. I did use taco seasoning, as others suggested, in place of the chili powder. We all liked it a lot and it will become a repeat around here. I'm always looking for a dish we can all enjoy without my having to prepare more than one entree for dinner to satisfy everyone.
