Potato and Broccoli Casserole

I didn't read the reviews first. I should have. It cooked for over an hour and was still just not quite done. I personally didn't care for it. Too starchy, but the family came back for thirds.

The Best Meatballs

This was a wonderful recipe but I didn't use the water at all because I found it moist enough without it and I used store bought organic bread crumbs instead. The recipe made enough for company of eight and everyone really liked them. Thanks!

Creamy Slow Cooker Marsala Pork

I took the advise of other reviewers and sauted the onions, garlic and mushrooms prior to adding them to the pot. I also increased the garlic and doubled the mushrooms. This was quite tasty but I couldn't really taste the Marsala even though I doubled the amount (we really like Marsala). Next time I may use a less expensive wine. Otherwise this came out delicious and the gravy was yummy. Thanks for the recipe!

Monday Morning Breakfast

Well this Monday Morning Breakfast tastes delicious on a Saturday, too! I made as directed and added it to whole grain wheat toast with a little Veganaise (Mayo substitute. It was a delicious fulfilling meal and a healthy one, too! I will definitely make this again.

Bacon Wrapped Smokies

I baked these on a baking rack so that the bacon grease would drain onto the cookie sheet. My kids loved them. I will definitely make again.

Mom's Zucchini Bread

Great stuff! I did substitute 1/2 oil for apple sauce just as a user suggested. This was my first time baking this and it was so easy. My kids loved it and I will definitely make this again.

Annie's Fruit Salsa and Cinnamon Chips

Guess I'll add my 5 stars to the other 1,400 reviews. This was scruptious! I took it to a card party and several of the ladies asked me for the recipe. I used Splenda instead of sugar for the cinnamon sugar, and whole wheat tortillas to make the chips. I also used Splenda in the salsa, and added mangos. DH tried a taste before I left for the party, and I had to pry the bowl out of his hands. Great recipe!

Oatmeal Pancakes

I also did not make the syrup. I'm on South Beach, and the syrup has too much sugar for me, but I'd love to try it eventually. The pancakes were wonderful. I took the advise of another reviewer and added 1/2 tsp of baking powder to make sure they rose, and they did. I also added a little cinnamon and vanilla to the batter, and sprinkled some golden raisins over the uncooked side of the pancakes before flipping them. Served with Smart Balance and sugar-free syrup, these made a healthy breakfast for me and my husband. Thanks for the post.

Lemon Basil Pesto Flat Iron Steak

This was excellent! The only changes I made was to add an extra clove of garlic to the pesto and cut the lemon juice to 2 tsp because I didn't want it to be too tart. The garlic rubbed on the meat didn't do much good; it burned off while the meat was cooking, but that's a small quibble. My husband and I loved this. I served it with sliced tomatoes and roasted cauliflower. Thanks for the recipe, desi!

Spinach with Shrimp Orecchiette

Many professional chefs claim that one of the biggest mistakes home cooks make is to not heat their pans hot enough. There is nothing dangerous about pre-heating a pan for 3 minutes to get it to the proper temperature. I do it all the time......This was okay. Nothing special. I'm on South Beach and I couldn't find any whole wheat orecchiette so I used about 8 oz of whole wheat small elbows. I added some chopped yellow summer squash and chopped tomatoes after the onions cooked for a bit. I decreased the chicken stock to one cup and used some spicy V8 in place of the other cup. I added some cayenne and Sazon to spice up the dish a little. This was okay, a decent Tuesday night dinner, but I'm not sure I'll make it again. There are better uses for a pound of shrimp.

Cod Curry

This was terrific! I only had one 14 oz can of tomatoes, so I added a little tomato paste with the garlic and ginger, and a little water with the canned tomatoes. Otherwise, I followed the recipe. My husband and I enjoyed this very much. Thanks for the post!

Asian Spicy Tuna Salad

This wasn't particularly Asian nor spicy. I used an entire jalapeno, not just 1/2 teaspoon, doubled the curry powder and added celery and diced seeded cucumber. I just couldn't bring myself to put mayo in an "Asian" salad, so I made a vinaigrette from rice vinegar, soy sauce and sesame oil. Also, I used chopped green onions instead of white. With the changes, this came out very good. Spicy and Asian.
