Suki's Spinach and Feta Pasta

It's perfect just the way it is. Abosultey delicious and so super easy to make it's ridiculous. My 3 kids even liked it though the hot pepper was a bit too much for them. Though it's my fault because I added more and a little went a long way. :) One of my favorite recipes because of it's full flavor and cook quick time.

Garlic Chicken with Orzo Noodles

Not bad - has a subtle flavor to it but still a nice kick to it as well. Used half the amount of oil, a generous shake of Italian seasoning instead of parsley, and threw in some tomatoes.

Meatball Potato Supper

This dish was okay, but not great. I put the meatballs in the overn at 425 degrees for fifteen minutes as another reviewer recommended. I also used cheddar cheese soup instead of of cream of celery soup. This was a lot like something my mom used to make, except that she spread the ground beef over and under the potatoes instead of making it into meatballs. I'd recommend microwaving the potatoes a bit before putting them into the casserole. I added additional time to the original baking time and some of the potatoes still were not done.

Chantal's New York Cheesecake

WOW, this was AMAZING! I followed the recipe exactly, but I didn't have a springform pan so I used a 9-inch cake pan. There was a little extra filling so I made a mini cheesecake in a custard can. I did use a water bath and cooked for about 15 extra minutes--at one hour the center was still very jiggly. Then I broke some major rules...I didn't cool it in the oven, but ran a knife around the edge and then threw it in the fridge overnight covered in foil. There was no cracking whatsoever and it had the perfect fluffy, creamy consistency the next day. YUM!

Sloppy Joe Sandwiches

Cake Balls

Please Read! I read everyone's reviews and I was still hesitant to make these and I didn't expect them to turn out, but the did. I baked the cake and let it cool slightly during the evening. When my french vanilla cake cooled enough, I broke it into pieces and mixed with Dove Milk Chocolate Ice Cream Topping instead of frosting. (I read another review and someone decided to use the Dove, so I tried it.) I mixed well and I took a cookie scoop and scooped out and rolled in my hands until the ball was nice and smooth and held together. I rolled each ball in my hands for about 20 seconds each and I dropped them into a container to be refrigerated overnight. I also put the Wilton lollipop sticks into each one the night before which I highly recommend because it makes eating them easier as well as a mess free dipping process. I used Bakers milk chocolate and I tempered the chocolate, so I could leave them sit at room temp. and I do not have to refrigerate them. Came out perfectly, try using the Dove instead of cake icing and as much or little as you think you need and I highly recommend using the lollipop sticks.

Yum! Didn't use as much oil, just enough to cover the bottom. Next time I might decrease the amount of onion though, as it was a little overpowering.

Crispy and Creamy Doughnuts

This is the Greatest Donut recipe I have ever Made! These Donuts are truely the Best!! My Husband was amazed that I could Make Donuts Better than the Bakeries!! They are Lihgt and fluffy and Good! Try them I guarantee You will Like them!

Imitation Crabmeat Salad

This was not bad but, I am still looking for something like the salad I get at the deli of the grocery store. The Ilalian dressing added an interesting flavor, it took some getting used to...I will try some of the other recipes before making this one again.

Unbelievable Chicken

Wow! Great chicken. We put it together one night and grilled the next night. I will make this again, and again, and again... PS- we used regular chicken thighs, it was all we had on hand.

Chewy Chocolate Chip Oatmeal Cookies

I substituted 1/4 cup cocoa powder for 1/4 cup of the flour for double chocolaty-ness! These cookies were HUGE, they definitely need to be spaced a few inches apart on the cookie sheet (I use a silpat) and they don't need to be "heaping spoonfuls" ping pong sized dough balls will work if you want more normal sized cookies. As long as you don't over-mix these come out delicious (and I don't even like oatmeal) I will be buying extra butter next time I go to the market just for these cookies.
