Ground lamb is sauteed with onions and lots of masala, and served over rice or noodles for a quick, flavorful meal. This recipe may be modified by adding peas (mattar), potatoes, or any other vegetable you like. It can also be used as a samosa or pastry filling. 

Traditional Gyro Meat

This Greek/Lebanese style meat loaf is sliced and served with pita bread, tzatziki, and tomatoes for a delicious gyro that is the closest I've come to emulating my favorite Mediterranean restaurant. The preparation time seems long, but most of it is resting time, so you can be doing other stuff!

Mediterranean Made Rights (Loose Meat Sandwiches)

Where I live loose meat sandwiches are know as made rights, this is a Mediterranean take on this favorite. You can use tzatziki sauce (cucumber/yogurt sauce used on Gyros) in place of the feta sauce to give it a more gyro kind of touch.

Whip up these sweet and creamy fritters for your holiday table. Cottage cheese is blended with egg, cream, flour, baking powder, salt, sugar and nutmeg. Fried by the spoonful and dusted with confectioner's sugar, these are great served with jam.

I was introduced to Lumpia (Filipino egg rolls) by a woman I used to work with. This is my version of them, which I think is a more Americanized version.
