Rosemary Roasted Pork Tenderloin
SUBMITTED BY:
Carolyn Scheider
"This is one of my favorite herb recipes and really showcases the rosemary. The tender pork also picks up a slightly sweet taste from apple juice concentrate. -Carolyn Scheider of Austin, Texas"

Loved it! Instead of reserving some of the marinade it used it all and grilled the roast. I also used dried rosemary. The conversion rate was 1 tsp dry for every tablespoon fresh. It was delicious and tender and juicy. This one will go in my "private" recipe book.

This is an awesome recipe!! I only used one 1.75 pound pork tenderloin and cooked it according to package directions, but I made all of the marinade. I reserved about 2/3 cup and used the rest on the pork overnight. Next day, poured 1/3 cup over pork before baking, just as the recipe suggested, and I heated the remaining marinade to spoon over the cooked pork. It is soooo good! Will make it again and again.

I just made this recipe last week for dinner and it was absolutely great, my family and company love it. I didn't have apple concentrate, so I used apple juice instead, but everything else just like the recipe. Thank you very much for sharing

Easy to make... I didn't have apple juice concentrate - so I used a cup of apple juice. Also, I used 1.5 lb tenderloin instead of 3 one pounders. I still used all of the sauce - actually more sauce would be even better!

This recipe was great!!Everyone loved it. I doubled the sauce mixture.Whan the roast was done I took it out to rest. While it was resting I mixed about half cup of cold water and two tablespoons of cornstarch and added it to the drippings a little at a time while bringing it to a boil to thicken the mixture. After the mixture thickened I added a little more water to taste as the gravy was a little strong. The sauce turned into a very flavorful gravy. I will make this again many times.

This recipe was wonderful! Great flavor, perfectly balanced. I doubled the recipe, mixed everything together and poured it over a pork roast in my crock pot. Cooked on low for 5 hours, then took out the marinade, boiled it, and added 2 packets of pork gravy. It made the best roast and gravy I've ever had!

This dish turned out great! The pork was very tender and flavorful. I opted to make a sauce/gravy out of the reserved marinade, instead of using it for basting. Delicious! Thanks, Carolyn!

Great easy to make. My 4 year old loved it and he is a picky eater. I also did not have apple juice concentrate like some others so I used apple juice which worked very well. It was moist and juicy and contained just the right blend of seasonings.

This was excellent. I don't particularily like mustard, but the dijon worked well with the sauce. It was much sweeter than I thought it would be. I will definitely make this again. I may try this in my slow cooker and double the sauce as one reader said they did. Delicious!! Thanks for the recipe!

Wonderful recipe. The fresh rosemary is what does the trick. The kids even loved it. As with some of the other reviewers, I also used a cup of apple juice instead of concentrate and it worked well. This would be great to serve at a dinner party. For a meat dish, it is very rich tasting. And the Dijon flavor is not at all overwhelming, very subtle.
