I found this recipe in a cookbook 33 years ago, when I was newly married. It's tasty and simple to prepare-just right for a busy couple. It's also easy to double for a family of four. 

Lamb Casserole

You'll adore this casserole of fresh lamb, smoked ham, sausage, mixed vegetables, and large, white Italian kidney beans. Serve with fresh crusty bread. If you cook the lamb shank in water, boil it until it's falling off the bone. Then strain and reserve the stock, and replace the chicken stock with the lamb stock.

Sliced ham is layered in a casserole with pineapple and brown sugar then baked in ginger ale. My family does this every year with our Christmas Eve ham and it never fails to be anything but delicious! Scale it down and it will work to use up leftover ham too!
